Sausage Vegetable Soup Recipe
This is a very hearty and filling soup. I like to make this on cold winter nights when I have plenty of vegetables on hand. Very tasty and filling.

Ingredients
  • 2 quarts water
  • 1/2 pound kielbasa sliced
  • 3/4 cup sliced carrots
  • 1/2 cup chopped onion
  • 1 clove garlic finely chopped
  • 2 teaspoons salt
  • 1 teaspoon marjoram leaves
  • 1/2 teaspoon thyme leaves
  • 1/4 teaspoon ground white pepper
  • 1 bay leaf
  • 1 pound fresh mushrooms rinsed and drained
  • 3 cups thinly sliced cabbage
  • 1 cup diced potato

Directions
  1. In a large saucepan or Dutch oven combine water, sausage, carrots, onion, garlic, salt, marjoram, thyme, white pepper and bay leaf.
  2. Bring to boiling then reduce heat and simmer covered 30 minutes.
  3. Slice fresh mushrooms.
  4. Add to soup along with the cabbage and potato.
  5. Return to boiling then reduce heat and simmer covered until vegetables are tender about 30 minutes.
  6. Season to taste with additional salt and pepper if desired.
