Welsh Leek and Potato Soup

- 1 pound potatoes peeled shopping list
- 3/4 pound leeks shopping list
- 1 stalk celery shopping list
- 1 medium onion shopping list
- 1 pint milk shopping list
- 1 ounce butter shopping list
- 1-1/2 pints chicken stock shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons freshly ground black pepper shopping list
- 1/4 pint light cream shopping list
- 2 egg yolks shopping list
How to make it
- Slice potatoes.
- Wash leeks well to remove all grit then slice.
- Wash and chop celery then slice onion.
- Melt butter in a large pan and add prepared vegetables stirring gently over heat for a few minutes.
- Add stock and pepper and simmer for 1 hour.
