Welsh Leek And Potato Soup Recipe

Ingredients
  • 1 pound potatoes peeled
  • 3/4 pound leeks
  • 1 stalk celery
  • 1 medium onion
  • 1 pint milk
  • 1 ounce butter
  • 1-1/2 pints chicken stock
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • 1/4 pint light cream
  • 2 egg yolks

Directions
  1. Slice potatoes.
  2. Wash leeks well to remove all grit then slice.
  3. Wash and chop celery then slice onion.
  4. Melt butter in a large pan and add prepared vegetables stirring gently over heat for a few minutes.
  5. Add stock and pepper and simmer for 1 hour.

Where's the rest of the recipe???
Salt, pepper, light cream and egg yolks????


I'm with urzula -- this sounds just wonderful, and then you get to the end and, hey, what do you do with the egg yolks? (I figure the salt, pepper and cream is to stir in at the end. . . but the egg yolks have me stumped.


I'm totally with urzula and lagoule.
