Chicken Cheese Casserole Recipe
This casserole is great in late Fall and WInter. Its a whole meal in one dish, and it's so filling and comforting after a day out in the cold.

Ingredients
  • 2 lbs boneless chicken, cut into cubes
  • 1 lb egg noodles
  • 4 cans cream of chicken soup
  • 1 can peas and carrots
  • 1 lb shredded cheddar cheese
  • seasoning to taste (I use parsley, sage, rosemary, thyme & pepper)

Directions
  1. In a frying or saute pan, season and cook chicken through.
  2. In a seperate pot, boil and cook the egg noodles.
  3. Preheat oven to 350 and combine cooked chicken & noodles with soup, peas & carrots, and HALF the cheddar in baking dish at leat 13x9.
  4. Cover with foil and bake at 350 for 30-45 minutes or until heated through.
  5. Remove foil and sprinkle with remaining cheese. Reduce heat to 250 and bake until cheese is melted, 15- 20 minutes.

I can say from experience that this is an AWESOME dish! My boyfriend ate like 10 bowls, lol...
