Stuffed Capsicums With A Twist

- STUFFED capsicums shopping list
- Whole capsicums, stem removed and deseeded shopping list
- SALAD FOR STUFFING shopping list
- cherry tomatoes, halved or quartered shopping list
- basil, chopped shopping list
- garlic, chopped shopping list
- sweet chillies, finely sliced shopping list
- oil shopping list
- wine vinegar shopping list
- salt shopping list
- pepper shopping list
- TOPPING shopping list
- pancetta slices or bacon shopping list
- TO SERVE shopping list
- Thick toast slices shopping list
- Ricotta and rocket salad, dressed with your favourite dressing shopping list
How to make it
- STUFFING
- Place all ingredients into a bowl and mix
- PEPPERS
- Place salad stuffing into the prepared peppers and top with pancetta/bacon
- Place into a baking tray and cover with foil
- Bake in a moderate oven for 10-15 minutes
- Take the foil off for the last few minutes to crisp the pancetta/bacon
- SALAD
- Toss rocket leaves with ricotta and dress
- TO SERVE
- Place salad and thick crusty toast on to a plate and top the toast with the roasted capsicum
