Stuffed Capsicums With A Twist Recipe

Ingredients
  • STUFFED CAPSICUMS
  • Whole capsicums, stem removed and deseeded
  • SALAD FOR STUFFING
  • cherry tomatoes, halved or quartered
  • basil, chopped
  • garlic, chopped
  • sweet chillies, finely sliced
  • oil
  • wine vinegar
  • salt
  • pepper
  • TOPPING
  • Pancetta slices or bacon
  • TO SERVE
  • Thick toast slices
  • Ricotta and rocket salad, dressed with your favourite dressing

Directions
  1. STUFFING
  2. Place all ingredients into a bowl and mix
  3. PEPPERS
  4. Place salad stuffing into the prepared peppers and top with pancetta/bacon
  5. Place into a baking tray and cover with foil
  6. Bake in a moderate oven for 10-15 minutes
  7. Take the foil off for the last few minutes to crisp the pancetta/bacon
  8. SALAD
  9. Toss rocket leaves with ricotta and dress
  10. TO SERVE
  11. Place salad and thick crusty toast on to a plate and top the toast with the roasted capsicum
