My Dads Salmon

- 1 salmon filet, at least one inch thick throughout (or close to it at the thinner parts) shopping list
- kosher salt (to taste) shopping list
- fresh ground pepper (to taste) shopping list
- tarragon (to taste) shopping list
- 1/4 cup water shopping list
How to make it
- Pour the water into a broiling pan. (The water is so the natural oil from the fish doesn't smoke)
- Place the fish into the broiling pan and season with the salt and pepper to taste. (I do a sprinkle of salt and A LOT of pepper)
- Coat the top of the fish liberally with the tarragon.
- Broil on high for 7-10 minutes depending on thickness (and how you like your salmon)
- **I like mine "just" cooked, so I usually follow the 8 minutes an inch rule. You can test the Salmon by poking a fork into the center. When it is done it will "flake".**
- Serve hot with a lemon wedge.
