Stuffing -Stuffed Pork Chops Recipe
I have had this recipe for over a year and just recently tried it. It is very good!

Ingredients
  • 1/4 cup apricots, dried and chopped
  • 1-1/2 cups stuffing, prepared
  • 4 pork loin rib chops, 1-1/4 thick is good
  • 1/2 tsp. fennel seeds, crushed
  • 1/4 cup red currant or apple jelly
  • salt and pepper to taste

Directions
  1. Preheat oven to 400 F
  2. If desired, mix apricots into stuffing
  3. Coat large ovenproof skillet with cooking spray. Heat over medium- high heat. Add chops, cook, turning once, until lightly browned, 3 to 5 minutes per side.
  4. Brush top of Chops with half of the Jelly, Bake 7 minutes. Turn chops over, brush with remaining glaze.
  5. Bake 5 to 8 minutes until no longer pink near bone.
  6. STUFF THE CHOPS...
  7. Using a sharpe knife, cut 1/2'' deep slit into side of on chop, repeat with remaining chops.
  8. Place stuffing in pocket of each chop. Sprinkle both sides of the chops with fennel, salt and pepper to taste.
