Busy Day Pigs In A Blanket Recipe
This is the faster version of stuffed cabbage! Another of my Nana's recipes!

Ingredients
  • 1 head of cabbage
  • 1/2 cup onion chopped
  • 1/4 cup celery
  • 2 eggs
  • 2 1/2-3 lbs. ground chuck beef
  • 3/4 cups minute rice
  • salt and pepper to taste
  • large can of tomato juice(I like to use the spicey v-8 juice but it does make it spicy)
  • 2-3 tsp. sugar

Directions
  1. Saute' onion and celery in small amount of butter or oleo.
  2. Mix ground chuck, eggs, rice, salt and pepper.
  3. Slice 1/2 head of cabbage and place in a roasting pan.
  4. Shape meat mixture in golf -size balls.
  5. Put on top of cabbage.
  6. Slice the other half of cabbage and placeon top of meatballs.
  7. Add sugar to v-8 juice and pour over cabbage.
  8. Cover and bake in a 400 oven for 30-45 minutes.
  9. Turn down oven to 350 and continue baking for 2 more hours.
  10. More tomato juice can be added as needed.
