Ingredients
  • 2 lbs. salmon filets
  • 1 egg
  • 2 tablespoons mayo
  • 1 tblspoon onion, grated
  • 1 tblspoon bell pepper, finely chopped
  • 1/2 tsp. salt
  • 1/4 C. breadcrumbs
  • 1/4 C. Jiffy corn muffin mix (more if it looks too "wet")
  • 3 whole roasted red peppers (from a jar)
  • 1 tbsp. olive oil
  • 1/4 C. half and half
  • 1/2 tsp. salt
  • 1 tbsp. butter

Directions
  1. Place salmon filet on wax paper on microwave safe plate.
  2. Sprinkle heavily with a lemon pepper seasoning on both sides.
  3. Cover with another piece of wax paper and fold to "seal".
  4. Place in microwave, yes I said MICROWAVE, (trust me), flesh side up, for about 1 1/2 minutes.
  5. Turn over and cook another 1 1/2 minutes.
  6. Let sit in microwave about 1 more minute.
  7. Meanwhile, whisk together egg, mayo, onion and salt.
  8. Remove salmon from microwave.
  9. Lift the skin off, if it doesn't come off with the wax paper.
  10. I always remove the dark material under the skin with a fork.
  11. Lots of people don't.
  12. (Now if you just want to stop here and eat the salmon filets, I don't blame you! Just mix some finely chopped cucumber with some Marzetti's dill dip and you've got a great main dish)
  13. If any pieces look a little too rare, they'll cook the next time around.
  14. Flake the salmon into a bowl.
  15. Sprinkle the salmon with the bread crumbs and Jiffy mix.
  16. Pour in the egg mixture .
  17. Mix and shape into patties.
  18. Lightly cover the patties with corn muffin mix and set in refrigerator for about 15 mins. to an hour.
  19. Heat olive oil in skillet and fry over medium-hi heat until golden brown, 2-3 minutes each side.
  20. Sauce:
  21. Puree the red peppers and add to saucepan.
  22. Over medium heat add olive oil, half and half and salt.
  23. Heat through and add the butter. Stir until melted.
