Fresh Salmon Patties With Roasted Red Pepper Sauce

- 2 lbs. salmon filets shopping list
- 1 egg shopping list
- 2 tablespoons mayo shopping list
- 1 tblspoon onion, grated shopping list
- 1 tblspoon bell pepper, finely chopped shopping list
- 1/2 tsp. salt shopping list
- 1/4 C. breadcrumbs shopping list
- 1/4 C. Jiffy corn muffin mix (more if it looks too "wet") shopping list
- 3 whole roasted red peppers (from a jar) shopping list
- 1 tbsp. olive oil shopping list
- 1/4 C. half and half shopping list
- 1/2 tsp. salt shopping list
- 1 tbsp. butter shopping list
How to make it
- Place salmon filet on wax paper on microwave safe plate.
- Sprinkle heavily with a lemon pepper seasoning on both sides.
- Cover with another piece of wax paper and fold to "seal".
- Place in microwave, yes I said MICROWAVE, (trust me), flesh side up, for about 1 1/2 minutes.
- Turn over and cook another 1 1/2 minutes.
- Let sit in microwave about 1 more minute.
- Meanwhile, whisk together egg, mayo, onion and salt.
- Remove salmon from microwave.
- Lift the skin off, if it doesn't come off with the wax paper.
- I always remove the dark material under the skin with a fork.
- Lots of people don't.
- (Now if you just want to stop here and eat the salmon filets, I don't blame you! Just mix some finely chopped cucumber with some Marzetti's dill dip and you've got a great main dish)
- If any pieces look a little too rare, they'll cook the next time around.
- Flake the salmon into a bowl.
- Sprinkle the salmon with the bread crumbs and Jiffy mix.
- Pour in the egg mixture .
- Mix and shape into patties.
- Lightly cover the patties with corn muffin mix and set in refrigerator for about 15 mins. to an hour.
- Heat olive oil in skillet and fry over medium-hi heat until golden brown, 2-3 minutes each side.
- Sauce:
- Puree the red peppers and add to saucepan.
- Over medium heat add olive oil, half and half and salt.
- Heat through and add the butter. Stir until melted.
