How to make it

  • Mix the dry ingredients in a bowl and then add the egg and EVOO. If there isn't enough moisture, then you can add water. If the dough is too sticky, then add flour. Roll the dough into a ball and put it in the fridge for 20 minutes.
  • Now if you have a pasta maker, then roll the dough out a little and run through the pasta maker. Otherwise, roll the dough out until the thickness is to your liking and cut with a knife.
  • Cooking in boiling water for 5 minutes or thoroughly cooked.

    Add a little dried and crushed oregano, basil, parsley or thyme to the flour. It's cool.

    I think the dough needs to be kneaded a bit. Use the mix master's dough hook..then follow as directed to "rest" the dough. It will roll out better without elastic springing back.

    EVOO IS EXTRA VIRGIN OLIVE OIL DIFFERENT IN TEXTURE, TAST, AND COLOR OF REGULAR OLIVE OIL.
