Almost Vegitarian Easy Ceaser Salad Recipe

Ingredients
  • Ice Burg Lettuce Leaves (as many as you want)
  • 1 large Tomato - roughly chopped
  • 1/2 cup Cheese - grated or diced
  • 1/2 cup Croutons
  • 2 Eggs
  • 1 tbsp Brown Vinegar
  • Ceasar Dressing

Directions
  1. Take the Lettuce Leaves and tear them into large bite-size pieces and place them into a medium sized mixing bowl.
  2. Pour a small amount of your favorite Ceasar Dressing onto the Lettuce and mix until well coated - refridgerate.
  3. Poach Eggs in a pan of boiling water with the Brown Vinegar (this helps keep the egg from seperating) until well cooked, remove from water and allow to cool in refrigerator for 5 minutes.
  4. Take Lettuce from refrigerator and divide evenly into 2 pasta bowls.
  5. Top each serving of Lettuce with half each of Tomato, Cheese and Croutons, finishing with the Egg on top.
  6. Garnish with a little Parsely if desired and enjoy!
  7. (to make a chicken or lamb salad, just cook up some stir-fry sized pieces and use them in place of the Egg! but just personally, I like my salad served as is, or as a side with a crumbed chicken breast)

Ceaser Salad is one of those that I have to have even though it is not vegan. I like making my dressing from scratch, it is worth the time.
