How to make it

  • Lightly season the chicken with the pepper.
  • Heat a frying pan or wok over high heat and swirl the oil to coat.
  • Add the chicken, in batches, and cook over medium heat for 3-4 minutes, or until browned.
  • Return all chicken to the pan and stir in the tarragon.
  • Add the cream, bring to a boil and boil for 3 minutes (or until the sauce has thickened slightly).
  • Add the lemon juice, salt and pepper.
  • **I serve with egg noodles and a nice green salad***
