  • 2 tablespoons canola oil
  • 1 red onion, diced
  • 1 can (1 pound) dark red kidney beans, rinsed and drained
  • 1 can (1 pound) pinto beans, rinsed and drained
  • 1 can (1 pound) black beans, rinsed and drained
  • 1 can (8 ounces) chunk pineapple in natural juice
  • 1/4 cup molasses
  • 1/4 cup natural maple syrup
  • 2 tablespoons tomato paste, thinned with 2 tablespoons water
  • 1/2 cup orange juice
  • 1 tablespoon dry mustard
  • 1 teaspoon Chinese five-spice powder
  • 1 teaspoon curry powder

Directions
  1. In a medium skillet, heat the oil and saute the onion until softened.
  2. Combine all the the other ingredients in a mixing bowl and stir to mix well. When the onions are soft, stir them into the bean mixture.
  3. Pour the mixture into a baking crock or casserole and cover.
  4. Bake at 300 degrees F for 1 to 1 1/2 hours.
