How to make it

  • In a small saucepan cook onions, coriander and cumin in hot oil for about 10 minutes, stirring occasionally. (should be very tender) remove from heat and stir in cilantro.
  • Transfer onion to the food processor and add drained black beans, lime juice, chipotle chili peppers and salt and process until smooth.
  • Can be used immediately or kept in the fridge for 3 days.
