My son's fave and it's a good excuse for me to make it too . Haha ,So I made dis for his birthday

Ingredients
  • 2 Large eggs
  • 1 1/4 C low fat evoparated milk
  • 2 tsp vanilla
  • 1 1/2 C all purpose flour
  • pinch of salt
  • 2 tbsp white sugar
  • 2 tsp baking pwd
  • 3 tbsp butter or olive oil
  • Filling and Garnishing
  • 1 can apricot , cut into fairly medium slices
  • Vanilla ice cream
  • Golden syrup
  • Nutmeg and cinnamon powder
  • Fresh sprigs of mint leaves

Directions
  1. Beat the eggs , milk , vanilla
  2. Whisk the flour , salt , sugar , baking pwd
  3. Keep in the fridge overnight .
  4. Heat a flat pan and pour butter
  5. Pour a spoonful of batter and spread evenly into a circle .
  6. Flip it and cook on both sides .
  7. To Serve
  8. Keep some apricot slices in the middle of a warm pancake and roll it .
  9. Keep a small scoop of vanilla icecream on top.
  10. Drizzle with golden syrup.
  11. Sprinkle a pinch of nutmeg and cinnamon powder on top ,
  12. and a mint leaf on top .
  13. Serve at once .
