Apricot Pancake

- 2 Large eggs shopping list
- 1 1/4 C low fat evoparated milk shopping list
- 2 tsp vanilla shopping list
- 1 1/2 C all purpose flour shopping list
- pinch of salt shopping list
- 2 tbsp white sugar shopping list
- 2 tsp baking pwd shopping list
- 3 tbsp butter or olive oil shopping list
- Filling and Garnishing shopping list
- 1 can apricot , cut into fairly medium slices shopping list
- vanilla ice cream shopping list
- golden syrup shopping list
- nutmeg and cinnamon powder shopping list
- Fresh sprigs of mint leaves shopping list
How to make it
- Beat the eggs , milk , vanilla
- Whisk the flour , salt , sugar , baking pwd
- Keep in the fridge overnight .
- Heat a flat pan and pour butter
- Pour a spoonful of batter and spread evenly into a circle .
- Flip it and cook on both sides .
- To Serve
- Keep some apricot slices in the middle of a warm pancake and roll it .
- Keep a small scoop of vanilla icecream on top.
- Drizzle with golden syrup.
- Sprinkle a pinch of nutmeg and cinnamon powder on top ,
- and a mint leaf on top .
- Serve at once .
