I love this dessert; it says "springtime" like none other. Lemon combined with a creamy cheesecake layer, it is nothing short of Nirvana. And did I mention the shortbread base?

Ingredients
  • First layer:
  • 2 c. flour
  • 1c. butter
  • 1 c. chopped pecans
  • Second layer:
  • 2 (250 g.) pkg. cream cheese
  • 1 c. icing sugar
  • 1 c. whipping cream
  • Third layer:
  • 2 lemon pie fillings prepared according to package directions.
  • Fourth layer:
  • 2 c. whipping cream
  • 2 tbsp. icing sugar
  • 1 tsp. vanilla

Directions
  1. First Layer:
  2. Mix together until crumbly. Press into 9"x13" pan. Bake at 350 degrees F. for 10-15 minutes. Cool.
  3. Second layer:
  4. Beat cheese and sugar together. Beat cream until stiff. Fold into cheese mixture. Spread over cooled crust.
  5. Third layer:
  6. Pour over cheese layer.
  7. Fourth layer:
  8. Beat cream, sugar, and vanilla until stiff. Spread over lemon layer.
