Toffee-topped apple pie

- 750 g apples shopping list
- grated zest of 1 lemon shopping list
- grated zest of 1 orange shopping list
- 100 - 150 ml sugar (depending on apples) shopping list
- 1 tbsp plain flour shopping list
- 100 ml almonds, chopped shopping list
- 50 g butter shopping list
- TOFFEE TOPPING: shopping list
- 150 ml almonds, chopped shopping list
- 75 g butter shopping list
- 150 ml sugar shopping list
- 1 tbsp plain flour shopping list
- 1 tbsp milk shopping list
How to make it
- Preheat oven to 225C.
- Peel, core and slice the apples. Mix lemon zest, orange zest, sugar, flour and chopped almonds.
- In a buttered oven dish, alternate layers of sliced apples with layers of the flour mixture and shave butter between the apple layers (I use a cheese slicer and very cold butter - super quick and no mess).
- Bake in the preheated oven for 10 - 15 mins.
- Meanwhile, mix all the toffee ingredients in a saucepan and bring it to the boil on low heat.
- Remove the dish from the oven and pour the toffee topping over the apples. Return to the oven until the topping is golden brown and the apples are soft.
- Serve warm with softened vanilla ice cream.
