Toffee-topped Apple Pie Recipe
A very easy apple dessert.

Ingredients
  • 750 g apples
  • grated zest of 1 lemon
  • grated zest of 1 orange
  • 100 - 150 ml sugar (depending on apples)
  • 1 tbsp plain flour
  • 100 ml almonds, chopped
  • 50 g butter
  • TOFFEE TOPPING:
  • 150 ml almonds, chopped
  • 75 g butter
  • 150 ml sugar
  • 1 tbsp plain flour
  • 1 tbsp milk

Directions
  1. Preheat oven to 225C.
  2. Peel, core and slice the apples. Mix lemon zest, orange zest, sugar, flour and chopped almonds.
  3. In a buttered oven dish, alternate layers of sliced apples with layers of the flour mixture and shave butter between the apple layers (I use a cheese slicer and very cold butter - super quick and no mess).
  4. Bake in the preheated oven for 10 - 15 mins.
  5. Meanwhile, mix all the toffee ingredients in a saucepan and bring it to the boil on low heat.
  6. Remove the dish from the oven and pour the toffee topping over the apples. Return to the oven until the topping is golden brown and the apples are soft.
  7. Serve warm with softened vanilla ice cream.
