Ingredients
  • 5 ears fresh corn
  • 3 eggs, beaten
  • 3/4 cup milk
  • 1/4 cup plus 1-1/2 teaspoons bacon drippings
  • 1-1/2 Tablespoons sugar, more or less to suit your taste
  • 1 Tablespoon baking powder
  • 3/4 teaspoon salt
  • 1/2 cup plus 1 Tablespoon all-purpose flour

Directions
  1. Preheat oven to 400-degrees F.
  2. Cut corn from cobs, scraping cobs to remove the pulp.
  3. Combine scraped corn, eggs, milk, bacon drippings, sugar, baking powder, and salt; stir well.
  4. Gradually stir in flour.
  5. Heat a well-greased cast-iron-skillet in oven until very hot, about 3 minutes.
  6. Pour batter into hot skillet, and put in oven, increasing heat to 425-degrees.
  7. Bake for 25 minutes or until golden brown.
  8. Pour batter into hot skillet

Found this before placing my "Proudly South African" recipe. We traditionally steamed our bread, but will give this a try in the next season. My mother makes a baked corn bread - Louisiana Corn Bread - with corn meal and chilis, which is very nice
