How to make it

  • Preheat oven to 400-degrees F.
  • Cut corn from cobs, scraping cobs to remove the pulp.
  • Combine scraped corn, eggs, milk, bacon drippings, sugar, baking powder, and salt; stir well.
  • Gradually stir in flour.
  • Heat a well-greased cast-iron-skillet in oven until very hot, about 3 minutes.
  • Pour batter into hot skillet, and put in oven, increasing heat to 425-degrees.
  • Bake for 25 minutes or until golden brown.
  • Pour batter into hot skillet

    Found this before placing my "Proudly South African" recipe. We traditionally steamed our bread, but will give this a try in the next season. My mother makes a baked corn bread - Louisiana Corn Bread - with corn meal and chilis, which is very nice
