Ingredients

5 ears fresh corn

3 eggs, beaten

3/4 cup milk

1/4 cup plus 1-1/2 teaspoons bacon drippings

1-1/2 Tablespoons sugar, more or less to suit your taste

1 Tablespoon baking powder

3/4 teaspoon salt

1/2 cup plus 1 Tablespoon all-purpose flour

Directions

Preheat oven to 400-degrees F.

Cut corn from cobs, scraping cobs to remove the pulp.

Combine scraped corn, eggs, milk, bacon drippings, sugar, baking powder, and salt; stir well.

Gradually stir in flour.

Heat a well-greased cast-iron-skillet in oven until very hot, about 3 minutes.

Pour batter into hot skillet, and put in oven, increasing heat to 425-degrees.

Bake for 25 minutes or until golden brown.

Found this before placing my "Proudly South African" recipe. We traditionally steamed our bread, but will give this a try in the next season. My mother makes a baked corn bread - Louisiana Corn Bread - with corn meal and chilis, which is very nice
