Chorizo and Eggs

- 6-8 oz uncooked Mexican chorizo shopping list
- 12 eggs shopping list
- 1 ½ C. Mexican blend cheese, grated shopping list
- 1 tomato, diced shopping list
- 1 avocado, diced shopping list
- 1 onion, diced shopping list
- sour cream shopping list
- salsa shopping list
- flour tortillas shopping list
How to make it
- Remove chorizo from casing and cook in skillet, stirring and breaking up meat, until bubbling and completely separated, 4 to 5 min.
- Add eggs to chorizo. Cook, stirring, until eggs are scrambled and just set, about 5 min.
- Put on plates. Top with cheese, tomato, avocado and onion. Serve with salsa, sour cream and warm tortillas..
