How to make it

  • Remove chorizo from casing and cook in skillet, stirring and breaking up meat, until bubbling and completely separated, 4 to 5 min.
  • Add eggs to chorizo. Cook, stirring, until eggs are scrambled and just set, about 5 min.
  • Put on plates. Top with cheese, tomato, avocado and onion. Serve with salsa, sour cream and warm tortillas..

    Hello again, I did cook this today and it was fabulous! I sauteed the onions with the eggs instead of serving them raw but everything else was the same. We loved it! I also made homemade breakfast potatoes with onion, garlic and just a dab of the chorizo to go with the eggs. It really is a great and easy recipe! I gave it a 5! Thanks again for posting - Scubasuz
