Ingredients
  • 4 ounces Baker's Germans Sweet Chocolate
  • 1/2 cup water
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla
  • 1 cup buttermilk
  • COCONUT PECAN FILLING
  • 1-14 ounce can sweetened condensed milk
  • 3 egg yolks
  • 1/2 cup butter, room temperature
  • 1 1/3 cups flaked coconut
  • 1 cup chopped pecans
  • 2 teaspoons vanilla extract

Directions
  1. Melt chocolate and water together in large bowl, either in microwave or in top of double boiler
  2. Stir well, set aside to cool
  3. Sift together flour, baking soda, salt in medium bowl
  4. Set aside
  5. In large bowl, cream butter, sugar together until light and fluffy
  6. Add eggs one at a time
  7. Stir in vanilla
  8. Add flour mixture alternately with chocolate mixture and buttermilk,
  9. Mix until just combined
  10. Grease three 9 inch round cake pans, line bottoms with parchment paper
  11. Divide batter evenly into the three pans
  12. Bake at 350 degrees for 25-30 minutes, until toothpick inserted into center comes out clean and cake springs back when lightly pressed
  13. Cool in pans for about 15 minutes, then turn out onto wire racks to cool completely, removing the parchment paper
  14. FILLING
  15. In large saucepan over medium heat, stir together condensed milk, egg yolks, and butter.
  16. Cook, stirring constantly, for about 10 minutes, or until thick and bubbly
  17. Remove from heat, stir in coconut, pecans, and vanilla
  18. Cool to room temperature, stirring occasionally
  19. Spread between cake layers, then top of cake
  20. IT LOOKS NICE IF IT SPILLS OUT A LITTLE BETWEEN THE LAYERS
  21. ALSO MAY DOUBLE THE FILLING FOR EXTRA WONDERFUL GOODNESS :)
