My Pseudo-Indian Chicken Dish

- 4 or 5 chicken breasts (whole with ribs) shopping list
- 1 block frozen spinach shopping list
- 1 small can tomato paste shopping list
- at least a stick of butter shopping list
- 2 c whole milk shopping list
- 2 tbs olive oil shopping list
- 2 cloves garlic ~ fine mince shopping list
- thumb sized bit of ginger ~ grated shopping list
- 1/2 tsp cardamom shopping list
- 1/2 tsp cinnamon shopping list
- 1/2 tsp coriander shopping list
- 1/2 tsp curry shopping list
- salt to taste shopping list
How to make it
- preheat oven to 350
- in a casserole dish, add the chicken breasts, sprinkle with oil and spices
- add about an inch of water and cover, bake an hour.
- In a large saucepan add the juice and water from the chicken, tomato paste, spinach, garlic, ginger and milk, simmer for at least 20 minutes until thickened, salt it and slowly add chunks of butter until glossy and delicious
- Serve with jasmine rice and enjoy!
