My Pseudo-Indian Chicken Dish Recipe
I love Indian food and it is one of the only things I follow a recipe for every time. This is the first time I have made something on my own, my family enjoyed it! I even got my 7 year old to eat spinach and like it!

Ingredients
  • 4 or 5 chicken breasts (whole with ribs)
  • 1 block frozen spinach
  • 1 small can tomato paste
  • at least a stick of butter
  • 2 c whole milk
  • 2 tbs olive oil
  • 2 cloves garlic ~ fine mince
  • thumb sized bit of ginger ~ grated
  • 1/2 tsp cardamom
  • 1/2 tsp cinnamon
  • 1/2 tsp coriander
  • 1/2 tsp curry
  • Salt to taste

Directions
  1. preheat oven to 350
  2. in a casserole dish, add the chicken breasts, sprinkle with oil and spices
  3. add about an inch of water and cover, bake an hour.
  4. In a large saucepan add the juice and water from the chicken, tomato paste, spinach, garlic, ginger and milk, simmer for at least 20 minutes until thickened, salt it and slowly add chunks of butter until glossy and delicious
  5. Serve with jasmine rice and enjoy!
