How to make it

  • STEW BASE
  • Chop the onions and fry in 1/4 cup of oil until golden
  • Add the meat and stir fry
  • When the juices from the meat evaporate, add the turmeric and stir
  • add the salt and 3 cups of hot water
  • Put the lid on and simmer for about 50 minutes, stirring occasionally
  • Check the meat – if not tender, cook a little more
  • PEACHES
  • While the meat is cooking, peel and remove the stones from peaches and slice into wedges
  • Heat the butter in a separate frying pan and fry the peaches for 30 seconds each side
  • Remove from heat
  • SPICE MIX
  • Dissolve the tomato paste in 1 cup of hot water
  • Add sugar, lemon juice and cinnamon
  • Mix all together and add to the meat mixture
  • TO FINISH
  • Steam long grained rice while finishing the casserole
  • Add the peaches and any juices along with the walnuts to the casserole dish
  • Cook over low heat for about 15 minutes, or until the peaches are tender
  • Adjust the seasoning to taste. It should be a sweet/sour flavour
  • Good crusty bread and a bottle of red or white would go along with the Persian flavours of this dish

    I've just made this with an accidental alteration - I tossed in ground cumin instead of tumeric. It's fabulous, with peaches from my peach tree. Delicious.
