Khoresh-e-hulu Peach And Lamb Casserole Recipe
A great slow cooked casserole with mild Persian spices. Easy to make and even the kids would like this one. I served it with my warm asparagus and mushroom salad.

Ingredients
  • 1 medium onion, chopped
  • vegetable oil
  • 400g diced lamb
  • 1 tspn turmeric, ground
  • 1 tspn salt (or to taste)
  • 3 cups of hot water
  • 4 peaches, skinned, deseeded and cut into six wedges each
  • 4 tblspns butter
  • 1-1/4 tblspns tomato paste
  • 1 cup hot water, extra
  • 3 tblspns sugar
  • 2 tblspns lemon juice
  • 1/2 tspn ground cinnamon
  • 100g walnut kernels
  • Steamed rice

Directions
  1. STEW BASE
  2. Chop the onions and fry in 1/4 cup of oil until golden
  3. Add the meat and stir fry
  4. When the juices from the meat evaporate, add the turmeric and stir
  5. add the salt and 3 cups of hot water
  6. Put the lid on and simmer for about 50 minutes, stirring occasionally
  7. Check the meat – if not tender, cook a little more
  8. PEACHES
  9. While the meat is cooking, peel and remove the stones from peaches and slice into wedges
  10. Heat the butter in a separate frying pan and fry the peaches for 30 seconds each side
  11. Remove from heat
  12. SPICE MIX
  13. Dissolve the tomato paste in 1 cup of hot water
  14. Add sugar, lemon juice and cinnamon
  15. Mix all together and add to the meat mixture
  16. TO FINISH
  17. Steam long grained rice while finishing the casserole
  18. Add the peaches and any juices along with the walnuts to the casserole dish
  19. Cook over low heat for about 15 minutes, or until the peaches are tender
  20. Adjust the seasoning to taste. It should be a sweet/sour flavour
  21. Good crusty bread and a bottle of red or white would go along with the Persian flavours of this dish
