Khoresh-e-hulu Peach And Lamb Casserole

- 1 medium onion, chopped shopping list
- vegetable oil shopping list
- 400g diced lamb shopping list
- 1 tspn turmeric, ground shopping list
- 1 tspn salt (or to taste) shopping list
- 3 cups of hot water shopping list
- 4 peaches, skinned, deseeded and cut into six wedges each shopping list
- 4 tblspns butter shopping list
- 1-1/4 tblspns tomato paste shopping list
- 1 cup hot water, extra shopping list
- 3 tblspns sugar shopping list
- 2 tblspns lemon juice shopping list
- 1/2 tspn ground cinnamon shopping list
- 100g walnut kernels shopping list
- steamed rice shopping list
How to make it
- STEW BASE
- Chop the onions and fry in 1/4 cup of oil until golden
- Add the meat and stir fry
- When the juices from the meat evaporate, add the turmeric and stir
- add the salt and 3 cups of hot water
- Put the lid on and simmer for about 50 minutes, stirring occasionally
- Check the meat – if not tender, cook a little more
- PEACHES
- While the meat is cooking, peel and remove the stones from peaches and slice into wedges
- Heat the butter in a separate frying pan and fry the peaches for 30 seconds each side
- Remove from heat
- SPICE MIX
- Dissolve the tomato paste in 1 cup of hot water
- Add sugar, lemon juice and cinnamon
- Mix all together and add to the meat mixture
- TO FINISH
- Steam long grained rice while finishing the casserole
- Add the peaches and any juices along with the walnuts to the casserole dish
- Cook over low heat for about 15 minutes, or until the peaches are tender
- Adjust the seasoning to taste. It should be a sweet/sour flavour
- Good crusty bread and a bottle of red or white would go along with the Persian flavours of this dish

I've just made this with an accidental alteration - I tossed in ground cumin instead of tumeric. It's fabulous, with peaches from my peach tree. Delicious.
