Cannellini Bean Appetizer

- 1 16-oz. can cannellini beans, well-rinsed and drained shopping list
- 2 lemons, zest and juice shopping list
- 3 tbsp. extra-virgin olive oil shopping list
- salt and freshly ground pepper shopping list
- anchovies or Caviar, according to your own taste and budget shopping list
- 2 tbsp. chives, minced shopping list
How to make it
- Rinse the beans in warm water, until heated through.
- Meanwhile, in a medium-sized mixing bowl, whisk together the
- lemon zest and juice and olive oil. Season with salt and pepper
- and set aside.
- Drain the beans and toss gently with the dressing.
- Divide the beans evenly among 4 small serving plates.
- Top each mound of beans with either 2 anchovies criss-crossed each other or 1 teaspoon of caviar and a sprinkling of chives.
