How to make it

  • Rinse the beans in warm water, until heated through.
  • Meanwhile, in a medium-sized mixing bowl, whisk together the
  • lemon zest and juice and olive oil. Season with salt and pepper
  • and set aside.
  • Drain the beans and toss gently with the dressing.
  • Divide the beans evenly among 4 small serving plates.
  • Top each mound of beans with either 2 anchovies criss-crossed each other or 1 teaspoon of caviar and a sprinkling of chives.
