Cheddar Bacon Garlic Souffle

- 2-3 cups quality aged cheddar cheese -- shredded (you may substitute in a bit of shredded FRESH Parmesan for extra flavour.) shopping list
- 5 large eggs -- separated shopping list
- 8-10 slices bacon -- cooked crisp and crumbled shopping list
- 3 tablespoons butter shopping list
- 3-4 cloves garlic, minced shopping list
- 3 tablespoons flour shopping list
- 1/2 teaspoon dry mustard shopping list
- 1 cup milk shopping list
- 1 tsp cream of tartar shopping list
How to make it
- Grease a souffle dish (about 8" across, 3 1/2" deep) and place in freezer.
- Preheat oven to 325
- Melt butter over low heat in a large saucepan.
- Add garlic and sauté for a minute or two.
- Add flour and mustard and stir until smooth.
- Gradually stir in milk
- Increase heat to medium and stir until thickened
- Return heat to low
- Add cheese and stir until melted.
- Remove from heat.
- Beat egg yolks well
- Stir a spoonful of cheese mixture into egg yolks.
- Stir egg yolks mixture into cheese mixture and blend thoroughly.
- Stir in bacon
- Beat egg whites with cream of tartar until stiff.
- Stir a large spoonful of egg whites into cheese mixture
- Fold in remaining egg whites. (A rubber spatula is ideal for this.)
- Remove souffle dish from freezer, pour the cheddar-bacon-garlic-egg mixture into the dish
- Bake in preheated oven for 50 minutes.
- Serve immediately. Souffle waits for nobody.
- Don't expect leftovers.
