How to make it

  • Grease a souffle dish (about 8" across, 3 1/2" deep) and place in freezer.
  • Preheat oven to 325
  • Melt butter over low heat in a large saucepan.
  • Add garlic and sauté for a minute or two.
  • Add flour and mustard and stir until smooth.
  • Gradually stir in milk
  • Increase heat to medium and stir until thickened
  • Return heat to low
  • Add cheese and stir until melted.
  • Remove from heat.
  • Beat egg yolks well
  • Stir a spoonful of cheese mixture into egg yolks.
  • Stir egg yolks mixture into cheese mixture and blend thoroughly.
  • Stir in bacon
  • Beat egg whites with cream of tartar until stiff.
  • Stir a large spoonful of egg whites into cheese mixture
  • Fold in remaining egg whites. (A rubber spatula is ideal for this.)
  • Remove souffle dish from freezer, pour the cheddar-bacon-garlic-egg mixture into the dish
  • Bake in preheated oven for 50 minutes.
  • Serve immediately. Souffle waits for nobody.
  • Don't expect leftovers.
