Ingredients
  • 2-3 cups quality aged cheddar cheese -- shredded (you may substitute in a bit of shredded FRESH Parmesan for extra flavour.)
  • 5 large eggs -- separated
  • 8-10 slices bacon -- cooked crisp and crumbled
  • 3 tablespoons butter
  • 3-4 cloves garlic, minced
  • 3 tablespoons flour
  • 1/2 teaspoon dry mustard
  • 1 cup milk
  • 1 tsp cream of tartar

Directions
  1. Grease a souffle dish (about 8" across, 3 1/2" deep) and place in freezer.
  2. Preheat oven to 325
  3. Melt butter over low heat in a large saucepan.
  4. Add garlic and sauté for a minute or two.
  5. Add flour and mustard and stir until smooth.
  6. Gradually stir in milk
  7. Increase heat to medium and stir until thickened
  8. Return heat to low
  9. Add cheese and stir until melted.
  10. Remove from heat.
  11. Beat egg yolks well
  12. Stir a spoonful of cheese mixture into egg yolks.
  13. Stir egg yolks mixture into cheese mixture and blend thoroughly.
  14. Stir in bacon
  15. Beat egg whites with cream of tartar until stiff.
  16. Stir a large spoonful of egg whites into cheese mixture
  17. Fold in remaining egg whites. (A rubber spatula is ideal for this.)
  18. Remove souffle dish from freezer, pour the cheddar-bacon-garlic-egg mixture into the dish
  19. Bake in preheated oven for 50 minutes.
  20. Serve immediately. Souffle waits for nobody.
  21. Don't expect leftovers.
