How to make it

  • Wash the spinach and leave to drain in a colander.
  • Heat oil in large non-stick frying pan and sauté shallots over medium heat until brown, about 15-20 minutes.
  • Add vinegar, thyme and sugar and heat through. Add spinach and quickly stir-fry 1-2 minutes until spinach just start to wilt. Remove, sprinkle with salt and pepper and serve.
