Sauteed Spinach

- 200 g fresh spinach shopping list
- 2 shallots, sliced shopping list
- a few springs of thyme, leaves chopped shopping list
- 2 tbsp olive oil shopping list
- 1 tbsp balsamic vinegar shopping list
- 1 tsp brown sugar shopping list
- salt & pepper shopping list
How to make it
- Wash the spinach and leave to drain in a colander.
- Heat oil in large non-stick frying pan and sauté shallots over medium heat until brown, about 15-20 minutes.
- Add vinegar, thyme and sugar and heat through. Add spinach and quickly stir-fry 1-2 minutes until spinach just start to wilt. Remove, sprinkle with salt and pepper and serve.
