Ingredients
  • 200 g fresh spinach
  • 2 shallots, sliced
  • a few springs of thyme, leaves chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp brown sugar
  • salt & pepper

Directions
  1. Wash the spinach and leave to drain in a colander.
  2. Heat oil in large non-stick frying pan and sauté shallots over medium heat until brown, about 15-20 minutes.
  3. Add vinegar, thyme and sugar and heat through. Add spinach and quickly stir-fry 1-2 minutes until spinach just start to wilt. Remove, sprinkle with salt and pepper and serve.
