Chicken Francaise

- 2 eggs shopping list
- 4 boneless chicken breasts shopping list
- 1T. fresh parsley; chopped shopping list
- 2T. romano cheese shopping list
- lemon juice shopping list
- lemon slices shopping list
- 2T. butter melted shopping list
- 3T. cooking sherry shopping list
- olive oil shopping list
How to make it
- Cut breasts in half and pound until very thin.
- Season with salt & pepper.
- Combine eggs, lemon juice, cheese & parsley.
- Dust chicken with flour & dip in egg mixture.
- Saute in oil until golden brown on both sides.
- Lay chicken in backing dish with lemon slices between layers.
- Add butter & sherry.
- Bake @ 325F for 25-35 minutes.
- Reduce heat if mixture starts to bubble.

I used the juice of 1 and 1/2 lemons and threw some capers on it just like they do at my favorite restaurant - Manhattan of La Jolla. Came out perfect! I've been looking all over for this recipe.
