Ingredients
  • 3 MEDIUM UNPEELED BAKING POTATOES (ABOUT 1 1/2 POUNDS
  • 2 TBS LEMON JUICE
  • 2 TSP OLIVE OIL
  • 1 TSP DRIED OREGANO
  • 1/4 TSP PEPPER
  • 1/4 TSP SALT
  • 2 CLOVES GARLIC, MINCED
  • VEGETABLE OIL COOKING SPRAY

Directions
  1. CUT EACH POTATO LENGTHWISE INTO 8 WEDGES
  2. COMBINE LEMON JUICE, OLIVE OIL, OREGANO, PEPPER, SALT AND GARLIC IN A LARGE BOWL
  3. ADD POTAQTOES AND TOSS WELL TO COAT
  4. PLACE POTATOES SKIN SIDE DOWN ON A BAKING SHEET THAT HAS BEEN COATED WITH COOKING SPRAY
  5. BAKE AT 400 DEGREES FOR 45MINS OR UNTIL POTATOES ARE TENDER AND LIGHTLY BROWNED
