Not Exactly Italian Chocolate Creme Cake

- 1/2 cup butter shopping list
- 1/2 cup shortening shopping list
- 2 cups sugar shopping list
- 5 eggs shopping list
- 2 cups all-purpose flour shopping list
- 1 teaspoon baking soda shopping list
- 1/4 cup unsweetened cocoa powder shopping list
- 1 cup buttermilk shopping list
- 1 teaspoon vanilla extract shopping list
- 1 cup chopped pecans, (better chopped by hand, tastes fresher) shopping list
- icing shopping list
- 8 ounce package cream cheese, softened shopping list
- 1 stick unsalted butter shopping list
- 1/4 cup unsweetened cocoa powder shopping list
- 4 cups sifted confectioners sugar shopping list
- 1 cup coarsely chopped pecans (better chopped by hand) shopping list
- 1 teaspoon vanilla shopping list
- white chocolate chips for melting and drizzling over cake shopping list
- 1 tablespoon butter to melt with the white chocolate chips shopping list
How to make it
- Separate eggs
- In mixer bowl, with electric mixer, cream butter, shortening and sugar together
- Add egg yolks, one at a time, beating after each addition
- Stir in vanilla
- Sift soda, flour and 1/4 cup cocoa together in bowl or on waxed paper
- Add alternately with buttermilk to creamed mixture, beginning and ending with dry ingredients
- Add 1 cup chopped pecans
- Beat egg whites until stiff peaks form
- Fold into batter
- Pour batter into greased and floured, three 8 inch round cake pans
- Bake at 325 degrees for about 25 minutes
- Let cool for about 6 minutes
- Turn onto wire rack
- Let cakes cool completely before icing between layers and on sides
- When ready to ice place one layer on cake stand or plate
- Ice between layers, sides and top of cake
- ICING
- In bowl, cream the cream cheese and butter together
- Sift confectioner's sugar and 1/4 cup cocoa together, beating in a little at a time until well mixed
- Add vanilla
- Add chopped pecans
- After cake is iced, melt 1 cup White Chocolate Chips with 1 tablespoon butter
- Drizzle or *string* across cake in artistic manner
- Decorate top with whole fresh strawberries when ready to serve
