How to make it

  • Heat ghee in a heavybased saucepan. Add garlic, shallots, star anise, cinnamon stick and cardamon pods and fry until fragrant.
  • Add in rice and fry for 2-3 minutes until light golden.
  • Stir in water and milk.
  • Cover and simmer until rice is tander and liquid has been absorbed Add in raisins and cashew nuts and fluff up rice with fork.
  • (garnish rice with fried shallots and slices of spring onions)
