Ingredients
  • 50g soy bean curd (tofu) cut into small pieces
  • 5 tblspns cooking oil
  • 100g prawn meat
  • 300g thin rice noodles (vermicelli)
  • 3 eggs
  • 50g pickled white radish
  • 3 tblspns dried shrimp
  • 3 tblspns sugar
  • 3 tblspns tamarind juice
  • 3 tblspns fish sauce
  • 3 tblspns ground roasted peanuts
  • 500g bean sprouts
  • 50g chopped chives

Directions
  1. Heat 3 tablespoons of the cooking oil in a frying pan
  2. Add soybean curd
  3. When it has yellowed, add prawn meat and noodles with just enough water to soften them
  4. Fry, turning constantly to prevent sticking
  5. Move the noodles to one side of the pan
  6. Put remaining oil in pan
  7. Break eggs into pan, combine and spread in a thin omelette like layer to cover the base of the pan
  8. When set, turn the noodles on top
  9. Add pickled radish, shrimp, sugar, tamarind juice, fish sauce and mix all together
  10. Cook until well mixed
  11. Add ground peanuts, bean sprouts and chives
  12. Toss together
  13. Serve
