How to make it

  • Heat 3 tablespoons of the cooking oil in a frying pan
  • Add soybean curd
  • When it has yellowed, add prawn meat and noodles with just enough water to soften them
  • Fry, turning constantly to prevent sticking
  • Move the noodles to one side of the pan
  • Put remaining oil in pan
  • Break eggs into pan, combine and spread in a thin omelette like layer to cover the base of the pan
  • When set, turn the noodles on top
  • Add pickled radish, shrimp, sugar, tamarind juice, fish sauce and mix all together
  • Cook until well mixed
  • Add ground peanuts, bean sprouts and chives
  • Toss together
  • Serve
