- 50g soy bean curd (tofu) cut into small pieces shopping list
- 5 tblspns cooking oil shopping list
- 100g prawn meat shopping list
- 300g thin rice noodles (vermicelli) shopping list
- 3 eggs shopping list
- 50g pickled white radish shopping list
- 3 tblspns dried shrimp shopping list
- 3 tblspns sugar shopping list
- 3 tblspns tamarind juice shopping list
- 3 tblspns fish sauce shopping list
- 3 tblspns ground roasted peanuts shopping list
- 500g bean sprouts shopping list
- 50g chopped chives shopping list
How to make it
- Heat 3 tablespoons of the cooking oil in a frying pan
- Add soybean curd
- When it has yellowed, add prawn meat and noodles with just enough water to soften them
- Fry, turning constantly to prevent sticking
- Move the noodles to one side of the pan
- Put remaining oil in pan
- Break eggs into pan, combine and spread in a thin omelette like layer to cover the base of the pan
- When set, turn the noodles on top
- Add pickled radish, shrimp, sugar, tamarind juice, fish sauce and mix all together
- Cook until well mixed
- Add ground peanuts, bean sprouts and chives
- Toss together
- Serve
