Potato Cakes From Yesteryear Recipe

Ingredients

4 medium potatoes, cooked and mashed

1 small onion, grated

1/2 cup flour

1 egg, slightly beaten

Salt to taste, 1-2 teaspoons

1 *teaspoon* black pepper

Directions

In large bowl, mix all together

Heat small amount of oil on medium heat in a skillet (I use iron)

Drop by a heaping tablespoon into the hot oil (can make smaller)

With a spatula, mash down the pancake

Turn once after you cook for several minutes until lightly browned

Drain

Serve hot

Great topped with sour cream, and sprinkled with chives
