Ingredients

How to make it

  • In large bowl, mix all together
  • Heat small amount of oil on medium heat in a skillet (I use iron)
  • Drop by a heaping tablespoon into the hot oil (can make smaller)
  • With a spatula, mash down the pancake
  • Turn once after you cook for several minutes until lightly browned
  • Drain
  • Serve hot
  • Great topped with sour cream, and sprinkled with chives

    This recipe brings back wonderful memories, too. It was one of my mom's best ways of using up leftover potatoes. Haven't made them in a long time; will have to do it soon. Thanks!
