Ingredients
  • 1 Can Black beans - 15 0z, drained
  • 1 C Corn - fresh or frozen
  • 8 ea Cherry tomatoes, sliced and seeded
  • 1/2 Onion, minced
  • 2 Tsp Garlic - minced
  • 1 ea Bell pepper - red, diced
  • 2 Tb Pumpkin seeds, chopped
  • 1/4 C Cilantro, chopped
  • 2 Tb Olive oil
  • 3 Tb Lemon juice - fresh
  • Salt and pepper, to taste

Directions
  1. Combine all ingredients and serve.
