Poached Salmon in Cucumber Sauce

- 8 salmon fillets shopping list
- 1 onion shopping list
- 1 tsp dill weed shopping list
- 2 cps dry white wine shopping list
- Sauce shopping list
- 1 cucumber peeled and diced shopping list
- 2 tsp salt shopping list
- 1 tsp dill weed shopping list
- 2 cps plain yougurt shopping list
How to make it
- Place salmon filets in baking dish
- slice onion thinly and cover salmon with slices
- sprinkle with dill weed
- pour wine over fish to cover and bake in a 350 degree oven about 20 minutes or untill fish is well cooked but not over done
- While fish is poaching chop cucumber finely and place in bowl
- sprinkle with salt. let sit
- When fish is done add yogurt and dill to cucumbers. Mix well
- Place one salmon filet on plate and cover with sauce. This is wonderful with little new potatoes and asparagus.
