Low-Fat King Ranch Chicken Casserole

- 6 Cups Shredded chicken Breast-(4 boiled chicken breasts) shopping list
- 1 Package (30 count) corn Torilllas shopping list
- 2 Cans Cream of Fat-Free chicken Soup shopping list
- 2 Cans Cream of Fat-Free mushroom soup shopping list
- 1 Can Diced rotel shopping list
- 1 Can Chopped/Diced Green Chilie's-(if you like it really spicy add more for your taste) shopping list
- 1 Small Can Diced black olives shopping list
- 2 Pounds Sliced Low-Fat Montery Jack cheese or Spicy Jack cheese shopping list
- 1/2 Pound Shredded Low Fat Sharp Cheddar shopping list
- 1 Tbls Morton's "Nature Seasoning" or "Season All" shopping list
- ground black pepper shopping list
- 2 Cups Crushed corn Flavor chips (Dorito's taste best) shopping list
- 8-12 Cups Shredded lettuce shopping list
- 6 Diced Rip Red tomatoes shopping list
- 1 Small Carton Lowfat plain yogurt or Low Fat/fat free sour cream shopping list
How to make it
- Preheat Oven to 250
- Grease Large Glass Baking Pan (13X9 is best)
- Boil Chicken Breasts in a Covered Pot using water until cooked, let chicken cool to touch then, finely "Shred " the chicken using a Fork & Knife **While Chicken is Cooking: Slice all Jack Cheese into 1/4 inch thick slices & Shred the entire 1/2 pound of Sharp Cheddar Cheese & Cut the entire package of Flour Tortillas into 1x3 strips
- Combine the following Ingredents in a Large Mixing Bowl: Soups, Rotel, Green Chili's & Seasoning, then mix well by hand.
- Begin to Layering in this order on to the Greased Baking Dish: 1/2 of the Sliced Tortillas, 1/2 of the Shredded Chicken, 1/2 of the Soup/Rotel Mixture & 1/2 of the Jack Cheese, Repeat in the same order using the remaining ingredients. On the last layer of Jack Cheese top with 1/2 of the shredded Cheddar Cheese, then the entire 2 cups of Crushed Corn Chips. (Chips will also keep the cheese from burning)
- Bake 30-45 minuites untill cheese & sauce's are bubbling, remove from oven and place on a cooling rack for 10-15 minuites. **
- While Casserole is Baking, Chop/Dice Tomatoes & Lettuce
- Serve topped with Lettuce, Tomatoes, Shredded Cheddar Cheese, Fresh Ground Pepper (to taste) Diced Black Olives & Yogurt or Sour Cream...ENJOY
