Seaweed Pudding Recipe
A dear friend used to make this for me YEARS ago when I was a teenager. I THINK this is how he made it...

Ingredients
  • 1 cup Irish moss (Chondrus crispus) - get it at a health food store
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 4 cups milk

Directions
  1. Soak Irish moss in water for a few minutes.
  2. Clean and drain in a colander.
  3. In a double boiler, cook milk and Irish moss for 20 minutes, stirring constantly.
  4. Add salt and sugar.
  5. Cool 5 to 10 minutes more.
  6. Strain out seaweed.
  7. Add vanilla.
  8. Chill.
  9. As I recall, it was WONDERFUL for a nervous tummy.
