Pumpkin Cake Roll Recipe


PUMPKIN CAKE ROLL Recipe
I bake one of these every year for Thanksgiving.

Ingredients
  • 3 eggs, beaten
  • 1/3 can pumpkin
  • 1 tsp. lemon juice
  • 1 cup sugar
  • 3/4 cup all-purpose flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 cup chopped pecans
  • Filling:
  • 6 oz. cream cheese
  • 1/2 stick butter or margarine
  • 1 tsp. vanilla
  • 1 cup powdered sugar

Directions
  1. Beat first four ingredients together. Add dry ingredients into pumpkin mixture. Spread mixture in a greased jellyroll pan lined with wax paper. Sprinkle top with chopped pecans. Bake for 15 min at 375 degrees.
  2. While cake is hot, turn out on towel that has been sprinkled with powdered sugar. Roll up in towel and let cool.
  3. While cake is cooling, prepare the filling. Mix all filling ingredients until creamy.
  4. When cake has cooled, unroll and spread with filling. Roll up again and chill for 30 minutes. Slice and serve.
