PUMPKIN CAKE ROLL

- 3 eggs, beaten shopping list
- 1/3 can pumpkin shopping list
- 1 tsp. lemon juice shopping list
- 1 cup sugar shopping list
- 3/4 cup all-purpose flour shopping list
- 1 tsp. baking powder shopping list
- 2 tsp. cinnamon shopping list
- 1 tsp. ginger shopping list
- 1 tsp. nutmeg shopping list
- 1/2 tsp. salt shopping list
- 1 cup chopped pecans shopping list
- Filling: shopping list
- 6 oz. cream cheese shopping list
- 1/2 stick butter or margarine shopping list
- 1 tsp. vanilla shopping list
- 1 cup powdered sugar shopping list
How to make it
- Beat first four ingredients together. Add dry ingredients into pumpkin mixture. Spread mixture in a greased jellyroll pan lined with wax paper. Sprinkle top with chopped pecans. Bake for 15 min at 375 degrees.
- While cake is hot, turn out on towel that has been sprinkled with powdered sugar. Roll up in towel and let cool.
- While cake is cooling, prepare the filling. Mix all filling ingredients until creamy.
- When cake has cooled, unroll and spread with filling. Roll up again and chill for 30 minutes. Slice and serve.
