How to make it

  • 1. In a large bowl, stir together buttermilk, hot wing seasoning mix,
  • and hot sauce. Add chicken, making sure it is completely submerged. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  • 2. In a 9x13-inch baking pan, combine coating mix and spices. Mix
  • together thoroughly. Remove chicken from buttermilk and coat with spice coating mixture. Let chicken sit to dry in coating mixture until ready to fry.
  • 3. Heat about ½ inch oil in a large, straight-sided skillet to 375 degrees F.
  • Working in batches, add chicken to oil, skin sides down. Fry for 20
  • minutes, turning frequently. Drain fried chicken on paper towels or on wire cooling racks over paper towels.

    i am going to have to experiment, Henrie - i cannot get the mixes here and i always mix my own - could you, please, write down the spices in those mixes? maybe i can re-create, experiment, and get them to tast as good, well, NEARLY as good as yours?
