How to make it

  • To make stuffing heat the oil and sauté garlic and spinach for about three minutes then combine with the potatoes and cheese and season with salt and pepper.
  • Blot trout dry and sprinkle the cavities with salt and pepper.
  • Preheat oven to 400.
  • Oil a baking dish and sprinkle with shallots.
  • Fill trout with stuffing mixture and place them side by side on the baking dish.
  • Sprinkle with wine and cover with parchment or foil and bake 15 minutes.
  • Uncover and dot with butter then bake additional 5 minutes.

    Hi,
    I altered this dish a little.
    I had frozen tilapia filets, so I tawed them out and spinkled them with salt and pepper. I put the potato/spinach stuffing on top of filets. Left our the shallots and the red wine, but sprinkled it with worcestershire sauce. Added lemon juice right before serving. Everything else was the same and it was still fabulous.
