Ingredients
  • 1 roasted chicken, cubed
  • 10 large flour tortillas
  • 2 cans cream of chicken soup
  • 1 pint sour cream, low fat is fine
  • 1 7 oz can diced green chilis
  • 1 small can sliced black olives
  • 1 lb grated monterey jack cheese, can use pepper jack

Directions
  1. Mix sour cream and soup together, reserve 1/3 in seperate bowl.
  2. to the rest, add remaining ingredients except tortillas. and 1/2 of cheese.
  3. fill tortillas and roll up, put in 9X13 pan
  4. spread sour cream-soup mixture over top and rest of cheese
  5. bake 350 degrees for 30 mins

This is an interesting spin on the typical Chicken Enchilada recipe. I prefer the heat from the pepper jack cheese, I am use to having refried beans in with the filling.
