How to make it

  • Stew papaya and water together until smooth sauce is obtained: press through a coaarse sieve if necessary. Cream shortening and sugar and mix well. Add beaten egg .
  • Sift dry ingredients. Add cooled papaya and dry ingredients alternatey to egg mix.
  • Fold In lemon juice and raisins. Pour into boiled loa pan. Bake at 350 F. for 50 - 60 minutes.

    This would also make a great quick bread recipe! instead of 'fat' I will use olive oil, papaya is just now coming to our grocery store I almost picked a half of one up yesterday but put it back darn it.

    Lovely recipe dear, but I think there may be a couple of rather startling typos in there lol Love fresh papaya but never thought of it in a cake. I must try this very original recipe. There's no way I won't like this, as much as I love papaya. Thanks for sharing.
