Pizza Rustica Recipe

Pizza Rustica Recipe
This is a traditional Sicilian Easter pie called Pizza Rustica, or, as my husband calls it, Heart Attack Pie. It was my grandmother's recipe and it is VERY filling but soooo good.

Ingredients
  • 2 hard boiled eggs
  • 1/2 lb pepperoni
  • 3/4 lb Italian sausage
  • 2 oz ham
  • 1/2 lb prosciutto
  • 8 oz mozzerella
  • 8 oz provolone
  • 8 - 10 oz ricotta
  • Grated Locatelli cheese
  • 2 eggs
  • 2 frozen pie crusts
  • salt, pepper & garlic to taste

Directions
  1. Preheat oven to 400
  2. Allow at least one of the pie crust to partially thaw.
  3. Remove sausage from casings and mash into little pieces, browning them in a medium pan
  4. While sausage is cooking, in a food processor, chop ham, prosciutto, pepperoni, hard boiled eggs, mozzerella and provolone.
  5. In a large bowl, mix, BY HAND, ricotta, spices, grated cheese, and raw eggs with chopped ingredients and cooked sausage.
  6. Spread mixture into pie crust that has NOT been allowed to thaw.
  7. Flour a surface and remove thawed pie crust from pan.
  8. Roll or spread it out with your fingers so it becomes the pie's top and seal the pie, cutting slits in the top, and brushing with a bit of water.
  9. Bake at 400 for 15 minutes, lowering the heat to 325 for another 45 or until the crust is golden.
  10. Let it stand for five minutes before cutting it.
