How to make it

  • Preheat oven to 400
  • Allow at least one of the pie crust to partially thaw.
  • Remove sausage from casings and mash into little pieces, browning them in a medium pan
  • While sausage is cooking, in a food processor, chop ham, prosciutto, pepperoni, hard boiled eggs, mozzerella and provolone.
  • In a large bowl, mix, BY HAND, ricotta, spices, grated cheese, and raw eggs with chopped ingredients and cooked sausage.
  • Spread mixture into pie crust that has NOT been allowed to thaw.
  • Flour a surface and remove thawed pie crust from pan.
  • Roll or spread it out with your fingers so it becomes the pie's top and seal the pie, cutting slits in the top, and brushing with a bit of water.
  • Bake at 400 for 15 minutes, lowering the heat to 325 for another 45 or until the crust is golden.
  • Let it stand for five minutes before cutting it.
