Awesome Butternut Bake

- Large butternut squash, seeded, peeled, and cubed shopping list
- 2 eggs, separated shopping list
- 2 tsp dried rosemary (or thyme, oregano, basil, mix it up) shopping list
- 2 tsp veggie seasoning blend shopping list
- 1/2 cup bread or cracker crumbs (you can use saltine or seasoned crackers if you want to make it more interesting) shopping list
- 3 tbsp butter or margarine shopping list
- 2 tbsp parmesan cheese shopping list
How to make it
- Preheat oven to 350 degrees
- Boil squash until tender (approximately 20-30 minutes)
- Drain and mash
- Whisk egg yolks and add to squash
- Add seasonings to squash, and mix thoroughly
- Beat egg whites and beat until soft peaks form, and fold into squash mixture
- Spread mixture evenly in shallow baking dish
- Melt butter/margarine
- Add to bread/cracker crumbs, adjusting amount of crumbs to make it a slightly wet mixture
- Spread crumb mixture over top of casserole
- Sprinkle parmesan over top of everything
- Bake for about 30 to 40 minutes, until topping is nice and browned
