Ingredients
  • Large Butternut Squash, seeded, peeled, and cubed
  • 2 eggs, separated
  • 2 tsp dried Rosemary (or thyme, oregano, basil, mix it up)
  • 2 tsp veggie seasoning blend
  • 1/2 cup bread or cracker crumbs (you can use saltine or seasoned crackers if you want to make it more interesting)
  • 3 tbsp butter or margarine
  • 2 tbsp Parmesan Cheese

Directions
  1. Preheat oven to 350 degrees
  2. Boil squash until tender (approximately 20-30 minutes)
  3. Drain and mash
  4. Whisk egg yolks and add to squash
  5. Add seasonings to squash, and mix thoroughly
  6. Beat egg whites and beat until soft peaks form, and fold into squash mixture
  7. Spread mixture evenly in shallow baking dish
  8. Melt butter/margarine
  9. Add to bread/cracker crumbs, adjusting amount of crumbs to make it a slightly wet mixture
  10. Spread crumb mixture over top of casserole
  11. Sprinkle parmesan over top of everything
  12. Bake for about 30 to 40 minutes, until topping is nice and browned
