How to make it

  • Preheat oven to 350 degrees
  • Boil squash until tender (approximately 20-30 minutes)
  • Drain and mash
  • Whisk egg yolks and add to squash
  • Add seasonings to squash, and mix thoroughly
  • Beat egg whites and beat until soft peaks form, and fold into squash mixture
  • Spread mixture evenly in shallow baking dish
  • Melt butter/margarine
  • Add to bread/cracker crumbs, adjusting amount of crumbs to make it a slightly wet mixture
  • Spread crumb mixture over top of casserole
  • Sprinkle parmesan over top of everything
  • Bake for about 30 to 40 minutes, until topping is nice and browned
