This was an inspiration stemming from a visit to the restaurant La Playa in Corpus Christi, Tx. It was like nothing I've ever tasted! This dish was so exquisite I actually fly all the way from Seattle once a year to have it! I've looked EVERYWHERE fo... More

Ingredients
  • 2 whole chicken breasts
  • 2 avacados cut into slices
  • 1 cup grated cheddar cheese
  • 2 eggs beaten
  • 2 cups panko breading

Directions
  1. Pound the chickens flat
  2. roll avacado and cheese into chicken making a ball
  3. coat with egg and roll into panko covering all surfaces
  4. wrap into foil and bake at 350 for 45 min
