The Real Deal Beef Stroganoff Recipe
THE REAL DEAL BEEF STROGANOFF This recipe came from an estate sale. I obtained it when I purchased the family collection from the Weidman Estate in Elmo, Texas in 1991.

Ingredients
  • 1 stick sweetened butter
  • 1 large yellow onion thinly sliced
  • 2 pounds filet mignon
  • 3/4 cup flour
  • 1 pound fresh mushrooms sliced lengthwise
  • 2 envelopes gravy seasoning mix
  • 1 teaspoon salt
  • 1 teaspoon mustard
  • 1 cup heavy cream
  • 1 tablespoon sour cream

Directions
  1. Melt butter in large skillet and sauté onion until soft but not brown then remove to baking dish.
  2. Sauté mushrooms briefly in same skillet then remove to dish with onions.
  3. Slice beef across grain into 1/4" rounds.
  4. Lay each round on a board and slice with the grain into 1/4" wide strips.
  5. Transfer meat to a bowl then add flour and mix well.
  6. Remove meat to skillet where onions and mushrooms were sautéed then cook over medium.
  7. Continue cooing until meat is no longer pink.
  8. Add mustard, broth, 1 cup water, salt and heavy cream then mix with onions and mushrooms.
  9. Bake at 400 for 20 minutes then just before serving stir in sour cream.
