Ingredients
  • 1-1/3 c all purpose flour
  • 1/2 c plus 2 tbsp splenda
  • 1 tsp grated lemon zest
  • 1/2 tsp salt
  • 1/4 c olive oil
  • 2-3 tbsp milk or more, as needed
  • 2 pints medium, strawberries, rinsed and hulled
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • Confectioner's sugar

Directions
  1. Preheat oven to 400
  2. Mix flour, 2 tbsp splenda, zest and salt with fork
  3. Whisk together oil and milk
  4. Gradually add to dry ingredients, tossing with fork until ball of dough forms, add more milk if needed
  5. Press dough into disc; divide into 8 wedges
  6. Roll each between waxed paper into circles to fit 3" tart pans
  7. Press into pans; trim edges
  8. Place 4" square of waxed paper in each pan, weight with dried beans
  9. Bake 10 mins, remove paper and beans
  10. Bake 5 more mins
  11. Cool, remove from pans
  12. Cut 24 berries in half, reserve
  13. Thinly slice remaining berries
  14. In saucepan over medium heat, mix remaining sugar and cornstarch
  15. Add 1/2 c water and half of berry slices, cook, stirring and mashing until boiling
  16. Remove from heat, add remaining sliced berries and juice, cool
  17. One hour before serving, spoon berry mixture into shells, smooth top, refrigerate
  18. Arrange halved berries, cut side down, on top of corstatine
  19. Sprinkle with confectioner's sugar
  20. Enjoy a guilt free dessert!
