How to make it

  • Preheat oven to 400
  • Mix flour, 2 tbsp splenda, zest and salt with fork
  • Whisk together oil and milk
  • Gradually add to dry ingredients, tossing with fork until ball of dough forms, add more milk if needed
  • Press dough into disc; divide into 8 wedges
  • Roll each between waxed paper into circles to fit 3" tart pans
  • Press into pans; trim edges
  • Place 4" square of waxed paper in each pan, weight with dried beans
  • Bake 10 mins, remove paper and beans
  • Bake 5 more mins
  • Cool, remove from pans
  • Cut 24 berries in half, reserve
  • Thinly slice remaining berries
  • In saucepan over medium heat, mix remaining sugar and cornstarch
  • Add 1/2 c water and half of berry slices, cook, stirring and mashing until boiling
  • Remove from heat, add remaining sliced berries and juice, cool
  • One hour before serving, spoon berry mixture into shells, smooth top, refrigerate
  • Arrange halved berries, cut side down, on top of corstatine
  • Sprinkle with confectioner's sugar
  • Enjoy a guilt free dessert!
