Strawberry Crostatine

- 1-1/3 c all purpose flour shopping list
- 1/2 c plus 2 tbsp splenda shopping list
- 1 tsp grated lemon zest shopping list
- 1/2 tsp salt shopping list
- 1/4 c olive oil shopping list
- 2-3 tbsp milk or more, as needed shopping list
- 2 pints medium, strawberries, rinsed and hulled shopping list
- 3 tbsp cornstarch shopping list
- 1 tbsp lemon juice shopping list
- Confectioner's sugar shopping list
How to make it
- Preheat oven to 400
- Mix flour, 2 tbsp splenda, zest and salt with fork
- Whisk together oil and milk
- Gradually add to dry ingredients, tossing with fork until ball of dough forms, add more milk if needed
- Press dough into disc; divide into 8 wedges
- Roll each between waxed paper into circles to fit 3" tart pans
- Press into pans; trim edges
- Place 4" square of waxed paper in each pan, weight with dried beans
- Bake 10 mins, remove paper and beans
- Bake 5 more mins
- Cool, remove from pans
- Cut 24 berries in half, reserve
- Thinly slice remaining berries
- In saucepan over medium heat, mix remaining sugar and cornstarch
- Add 1/2 c water and half of berry slices, cook, stirring and mashing until boiling
- Remove from heat, add remaining sliced berries and juice, cool
- One hour before serving, spoon berry mixture into shells, smooth top, refrigerate
- Arrange halved berries, cut side down, on top of corstatine
- Sprinkle with confectioner's sugar
- Enjoy a guilt free dessert!
