How to make it

  • Mix well with hands to make a soft dough, but not a loose one.
  • Cover and let rest for 1/2 hour.
  • Make 8 balls from the dough.
  • Dust a work surface with flour and roll out 1 round at a time, as thin as you can. It should be thinner than the pie crust.
  • Heat a dry, non-stick frypan to medium-high.
  • Put the discs on the hot griddle for 35 to 40 seconds, or until brown spots appear on the underside. Baste the top side with water.
  • Flip and cook other side for 25-30 seconds.
  • Keep warm in a clean towel or layer between waxed paper for freezing.

    I love rotis but have always been ambivalent about the oil. The amoutn of oil does add when u make a few. Just wondering, though, does this still taste nice using water to baste? Guess I will just have to try it! Thanks for the idea though.

    Whole wheat flour will substitute, spelt is a related grain.
