Simple Spelt Roti Recipe
Spelt flour, water and a frying pan... you too can have delicious whole-grain roti at home! Makes 2 roti per serving.

Ingredients
  • 1 cup spelt flour
  • 1/2 cup water
  • 1/2 tsp salt

Directions
  1. Mix well with hands to make a soft dough, but not a loose one.
  2. Cover and let rest for 1/2 hour.
  3. Make 8 balls from the dough.
  4. Dust a work surface with flour and roll out 1 round at a time, as thin as you can. It should be thinner than the pie crust.
  5. Heat a dry, non-stick frypan to medium-high.
  6. Put the discs on the hot griddle for 35 to 40 seconds, or until brown spots appear on the underside. Baste the top side with water.
  7. Flip and cook other side for 25-30 seconds.
  8. Keep warm in a clean towel or layer between waxed paper for freezing.
