First time that I made this particular muffin over the weekend and family loved them. Not only did they have a delicious flavor but they were quite moist. Recipe came from Colorado Cache Cookbook which is a favorite of mine.

Ingredients
- 2 cups quick cooking oats
- 2 cups plain yogurt
- 2 eggs
- 1 cup brown sugar, packed
- 1 cup vegetable oil
- 2 cups flour
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp baking soda
- 1 cup chopped walnuts (optional)
- 1/4 cup cinnamon chips
Directions
- Mix all of the ingredients.
- Spoon into greased muffin tins.
- Bake at 400 degrees for 20-25 minutes.
- Recipe makes 16 muffins

:) Those paper muffin liners were purchased one of the times that I was back in NJ at a favorite place of mine. Glad to hear that the photo captured them so well. The muffins exceeded my expectations but then again one never knows how a recipe will turn out till you make it.

Interesting recipe and a great way to get your fibre lol I must say though, I have never come across cinnamon chips. Are they cinnamon flavoured choc chips or are they cinnamon nubs? Great recipe. Thanks for posting.
