How to make it

  • Combine garlic, vinegar, and a couple of pinches of kosher salt in a
  • medium bowl.
  • Whisking constantly, add olive oil in a steady stream until completely incorporated.
  • Combine watercress, almonds, 1/2 of the cheese shavings, and 1/2 of the diced membrillo in a second bowl.
  • Drizzle dressing over salad and toss to coat.
  • Divide salad among 4 plates, and garnish with remaining Manchego cheese and membrillo.
  • Serve immediately.

    Manchego is an aged sheep’s-milk cheese from Spain, look for it in gourmet groceries also; all of these Spanish products are also available online at La Tienda.

    Look for membrillo, also called quince paste, in gourmet groceries and Latin markets; or at Whole Foods in the cheese section.
