This is something that I threw together for supper one night. One of those cook with what you have nights.

Ingredients
  • 1 lb smoked sausage sliced
  • 1 Large onion sliced
  • 1 package of Uncle Bens Wild Rice
  • 1 can of blackeyed peas
  • 1/2 clove of garlic
  • 1/2 cup of plain white rice
  • 3 1/4 cups of hot water
  • Cajun hot sauce to taste

Directions
  1. Sautee sausage and onions and garlic in a large skillet with a tsp of EVOO
  2. When onions are starting to turn translucent add all of the other ingredients (water first) and simmer covered for about 25 min.
  3. Let stand for about 5 min and serve
