How to make it

  • Heat oil and 2 T. butter over medium high heat in pan.
  • Season steaks with salt and freshly ground black pepper.
  • Saute steaks 3-4 minutes on each side for medium rare.
  • Remove to a warm platter and cover with foil. Let rest.
  • Pour oil out of pan: add 1 T. butter and the shallots~cook 1 minute.
  • Add beef broth and boil rapidly for up to 2 minutes to deglaze the pan.
  • Add bourbon (note: if using a gas stove take pan off flame to add the alcohol)
  • Boil 1-2 minutes more.
  • Remove from heat.
  • Stir in the 3 T. of butter, one T. at a time, until sauce is silky.
  • Pour sauce over steaks and serve.
