Whiskey Steaks

- 2 T. cooking oil, such as Canola shopping list
- 2 T butter shopping list
- 6 half-pound beef tenderloins shopping list
- salt and freshly ground pepper shopping list
- For sauce: shopping list
- 1 T. butter shopping list
- 2 T shallots, minced shopping list
- 1/2 cup beef broth shopping list
- 1/3 cup bourbon shopping list
- For finishing sauce: shopping list
- 3 T. butter, softened shopping list
How to make it
- Heat oil and 2 T. butter over medium high heat in pan.
- Season steaks with salt and freshly ground black pepper.
- Saute steaks 3-4 minutes on each side for medium rare.
- Remove to a warm platter and cover with foil. Let rest.
- Pour oil out of pan: add 1 T. butter and the shallots~cook 1 minute.
- Add beef broth and boil rapidly for up to 2 minutes to deglaze the pan.
- Add bourbon (note: if using a gas stove take pan off flame to add the alcohol)
- Boil 1-2 minutes more.
- Remove from heat.
- Stir in the 3 T. of butter, one T. at a time, until sauce is silky.
- Pour sauce over steaks and serve.
