Ingredients
  • 2 T. cooking oil, such as Canola
  • 2 T butter
  • 6 half-pound beef tenderloins
  • salt and freshly ground pepper
  • For sauce:
  • 1 T. butter
  • 2 T shallots, minced
  • 1/2 cup beef broth
  • 1/3 cup bourbon
  • For finishing sauce:
  • 3 T. butter, softened

Directions
  1. Heat oil and 2 T. butter over medium high heat in pan.
  2. Season steaks with salt and freshly ground black pepper.
  3. Saute steaks 3-4 minutes on each side for medium rare.
  4. Remove to a warm platter and cover with foil. Let rest.
  5. Pour oil out of pan: add 1 T. butter and the shallots~cook 1 minute.
  6. Add beef broth and boil rapidly for up to 2 minutes to deglaze the pan.
  7. Add bourbon (note: if using a gas stove take pan off flame to add the alcohol)
  8. Boil 1-2 minutes more.
  9. Remove from heat.
  10. Stir in the 3 T. of butter, one T. at a time, until sauce is silky.
  11. Pour sauce over steaks and serve.
