Ingredients
  • 3 sticks unsalted butter, softened
  • 3 cups granulated sugar
  • 5 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon lemon juice
  • 1 cup 7-Up
  • Confectioners' sugar for dusting

Directions
  1. Preheat oven to 325 degrees F.
  2. In a large bowl, cream butter and sugar.
  3. Add the eggs one at a time, beating well after each addition.
  4. Slowly add flour
  5. Add lemon juice and mix well
  6. Gently fold in the 7-Up, 1/4 cup at a time
  7. Pour mixture into greased angel food (or bundt) pan.
  8. Bake at 325 degrees for one hour until a toothpick inserted into the cake comes out clean.
  9. Transfer the cake from the oven to a wire rack. Let it cool in the pan for 15 minutes.
  10. Unmold the cake onto the wire rack to cool completely.
  11. Transfer to a serving platter and dust with confectioners' sugar.

Oh I have GOT to try this! I LOVE pound cakes, and have tried another 7-UP cake and wasn't that impressed, but the pop was just poured in with the other ingredients. This makes more sense to add it at the last. Sounds super! Thanks. - Linda
